ive taught myself everything i know so far (guitar, piano, bass, banjo, harmonica, ocarina, drums, and music theory in general) and plan to learn more once ive the money to purchase more instruments, but for me it came easily, i just looked at a piano, my mom showed me middle c and it all made sense to me, i figured out chords and scales on a keyboard so with any other instrument i just i found the tuning by ear and it made sense to me, i could find anything

but im sure there are plenty of books for any instrument, try going to a library, and im sure there are lots of websites as well for whatever you want to learn, as for which can you learn yourself? well i say any, even custom made or obscure instruments, but it seems many start out on guitar though i'd recommend piano for starters
